Spoon roast

Hi there, yellow-y unedited photo from a film camera! Sorry you don't look as good as say, the pictures of waffles from yesterday, but you do your best. We're still learning, after all. Who cares, though, you can see how perfect and buttery looking this meat looks, and how thin the dreaded 'grey edge' is on the piece in the back (ignore the front piece, that was an end piece). I'd never heard of spoon roast until they were just on super duper sale at Whole Foods recently, so Alex and I splurged and got a big one. We split it in half, and roasted both halves in the same way a few days apart. It's so good. Very tender, super easy to cook, as long as you like rare or medium rare meat. Our pieces weren't super fatty, super flavorful, and beefy. Yum.
Spoon roast is a top sirloin roast, or top butt. Apparently it is so tender you could eat it with a spoon, which sounds about right.

Another customer told me how to cook this roast in this way while I was buying ours, so I didn't invent this, just passing it on. 


1 spoon roast, make sure you know how much it weighs
salt and pepper

Preheat your oven to 500, and rub your meat all over with salt and pepper. Cook the meat for 5 minutes a pound for rare, 6-8 for medium rare. Turn off the oven, set a timer for 2 hours, and go do something else. After two hours, take your meat out, slice it, and it's done. Magic!

However! If you have a gas oven that's full of holes and spaces for hot air to get out, you may need to cook your meat for another 15-20 minutes at 400 to get it to not be as rare as you'd like.

    The roast came out a perfect medium rare. The additional instructions for a gas oven were extremely helpful. I have tried a number of methods to cook a Spoon Roast and this is the only one I will use from now on. When you cook it this way it truly is the "Poor Man's Prime Rib", maybe better!

    I tried this with a 2.7 pound spoon roast in my electric oven. I cooked it at 500 degrees for 19 minutes, and then turned the oven off and let it cook for 2 hours. When I took it out, it was darker on the outside but not crispy, and the inside was well done. I had expected it to be medium rare.

      Unfortunately, your roast was too small for this method (which also works well with a large eye round). You really need at least a 5-6 pound roast to get the best results.

      you can do this with a small roast. just leave it in for ONE hour after the oven off instead of TWO.

    I also bought a spoon roast @ Whole Foods last week on sale! Have never cooked one either....did you cover the roast at all or leave uncovered the entire time? Mine is 2.82 lbs so I'm thinking of cooking it about 19-20 mins. to achieve a "medium" doneness?

    I was skeptical about these directions...but my spoon roast came out perfect! My husband loved this! It was tasty, beefy and cooked perfectly medium rare. I will definately make this again...I just copied these direction for future meals! Super delicious and EASY! Thank you.

    Made one today, 4 lbs cooked it on 500 for 22 minutes. Was excellent, next time though a little less time to make it a little more red. very good, very moist. thanks for the tip.
