
Caramel Banana Pancake
1 banana, sliced thin
2 T butter
1/4 c plus 1 t brown sugar
2 eggs
1/4 c flour mix
tiny pinch xanthan gum
1/4 c milk
pinch of saltPreheat your oven to 425. Melt 2 T butter in your pan (I usually use cast iron but I used a heavy metal pan instead today) and then sprinkle 1/4 c brown sugar over. Let that cook for a minute, then toss in the bananas, stirring to coat. Let that cook while you mix up the pancake batter. Combine eggs, flour mix, xanthan gum, milk, salt and 1 t brown sugar in a bowl or blender and whip for 30 seconds, until slightly frothy. Pour over the caramel bananas and bake 20-25 minutes. Flip onto a plate and sreve immediately, maybe with ice cream if you're crazy. I have already had my ice cream for the morning, in my coffee.

I have a gluten of "baking bananas." I think I'll try this Sunday morning, too. When I saw the ice cream, I laughed, but I love this addition. :-)

ReplyDeleteOh. My. God. I just finished eating one of these and it was amazing -- sweet and sticky and chewy and eggy, and surprisingly quick and easy to make. Comes out tasting somewhere between a dutch baby and a sticky bun. I doubled the recipe and made it in a standard cast-iron pan and my husband and I were just able to polish it off. Best Sunday breakfast ever!

ReplyDeleteI am terrible at flipping pancakes - this recipe seems to resolve that issue and also provide instant pancake topping. I need to try this...
ReplyDeleteI tried this and it turned out good. A nice caramelized yummyness on the pancake. But I just don't think I'm a banana pancake person. I would also try berries, or maybe even apples.
