

1/2 onion, cut in half and cut into thin rings
1 c milk
salt and pepper
3/4 c rice flour (or flour of your choice)
oil for frying
Soak onions in the milk for 15 minutes, and combine the flour, salt and pepper in another bowl. After soaking, shake extra milk off onions and toss in the flour. Heat oil over medium heat until when you drop an onion in it sizzles a bit, but not ferociously because you want the onions to cook for a few minutes, not immediately. Cook onions in batches until browned, then drain on paper towels.

Blue Cheese Cream Sauce
2 T butter
2 T sorghum (or rice) flour
1 c milk
salt and pepper
1 t hot sauce
1/2 c crumbled blue cheese
Melt the butter over medium heat, then stir in the flour. Let cook a minute or two, then whisk in the milk, then salt, pepper, and hot sauce. Cook 5-10 minutes until slightly thickened, then stir in the blue cheese and cook on low a minute until melted.

Casserole
2-3 c chopped green beans
blue cheese cream sauce
fried onions
1/2 c gf breadcrumbs
Preheat oven to 350. Grease a casserole dish, then put the beans in and pour the cream sauce over. Stir to coat, then sprinkle with breadcrumbs and fried onions. Bake about 45 minutes, covering with foil if the top gets too brown.
What kind of blue cheese did you use? I know some kinds have gluten and I have been wondering which kinds are safe~

ReplyDeleteOh yeah, oops! I used Rosenborg blue cheese, which is found at most grocery stores around here, all their cheeses are completely gluten free!
