delicious eggs, I'm obsessed with home-fried tortillas
Today Alex and I both have off from work. This doesn't happen enough, so it's always nice. He's reading To Kill a Mockingbird for school, so I left him in bed to read while I went downstairs to let out Puff and make breakfast. We have a stray cat problem in the neighborhood, I don't know if I've mentioned it before, but there's generations of cats that live on my block. Picture the book Millions of cats, if you know it. While Puff loves our inside cat, her favorite game is chasing the outside cats out of the yard. She rarely barks (only at the door, and these cats), but when she's outside and there's a cat there, she's barking like crazy. It's pretty funny. We can't figure out if she's barking to scare the cats, or to get them to play with her. Her tail is wagging the whole time. Anyway, I got the book Nigella Express for Christmas, by Nigella Lawson. I love it, she's funny and I'm a sucker for pretty pictures. Her recipes are easy to switch to gluten-free, and very delicious. I make killer scrambled eggs anyway, but I decided to check her way of doing them and see if it was any good. It was. Plus, I really like home fried tortillas.
Scrambled eggs with tortillas, based on Nigella Lawsons recipe
serves 2
5 eggs
1/4 c milk
2 T chili-garlic sauce
2 scallions, chopped
a small handful of diced tomato
2 corn tortillas
4 pieces bacon
a big handful of shredded cheddar or cheese of choice
Fry the bacon until crisp. Remove from pan, drain. Return the pan to heat, snip the tortillas into small strips into the hot bacon fat. Cook 2-4 minutes until crispy, remove to paper towel. beat all the other ingredients together in a bowl, and snip the bacon into little pieces into the eggs. Add the tortilla strips. Blot some of the oil out of the pan with a paper towel (carefully, using tongs) and dump in the eggs. Cook, stirring, until set as you like. Eat immediately.
Also would be delicious with peppers, a tablespoon of salsa or two, and some onions.
