Last night we had snack food for dinner. I didn't feel like doing any serious cooking, but I did want to use up some of the cottage cheese I bought to make GF crescent rolls. So I got some little cocktail hotdogs and made pigs in blankets, and I had some chicken, so I made buffalo chicken nuggets with blue cheese sauce.
Buffalo chicken nuggets
about a pound of chicken thighs, cut into bite-size pieces
about 1 c of rice flour
salt and pepper
oil for frying
3 T butter
4 T chili-garlic sauce, or your favorite hot sauce
Heat the oil to fry the chicken in. Salt and pepper the flour, then dredge each chicken piece in it, then drop carefully into hot oil. fry on each side a few minutes, until cooked through (cut one in half to test). Remove to paper towel when done to drain. Melt the butter slowly in a saucepan. Add chili sauce, stir to mix well, then toss chicken.
Blue cheese sauce
1/2 c blue cheese (Rosenborg is gluten-free)
1/3 c sour cream
1 T mayonnaise
a splash of vinegar
1 clove garlic, minced
Mash everything together.

can you post the recipe for the crescent rolls?? cottage cheese as an ingredient sounds so interesting.
ReplyDeleteI'm going through this blog drooling over recipes (I love to bake) but am surprised by this one. Most blue cheeses aren't gluten-free -- the mold is apparently grown on bread -- but there are one or two that are.
