Sweet potato puree


Are you sick of my posts about mushed up foods? Sorry. I like mushed up foods right now. I feel like I'm making baby food but for myself!


Sweet potato puree
1 sweet potato
1 T butter
1 T maple syrup
1/4 c coconut milk

Preheat the oven to 400 and prick the sweet potato all over. Place on a piece of foil and bake for about an hour. Let cool a little, then cut the potato in half. Scoop the flesh out into the blender, and add the butter, maple syrup and coconut milk. Pulse until smooth. Serves two.

    This was delicious - thank you! My in-laws said it was the best sweet potato they'd ever had. I added salt and pepper, and probably could have done with a little less maple syrup as the roasted sweet potatoes were so sugary by themselves (I roasted them at 400 for 1.5 hours, at which point they practically fell out of their skins and were all caramel-y), but this is definitely a make-again recipe.
