Double chocolate brownies

Hi, I made double chocolate brownies. They're easy. And rich. The topping has coffee in it, which I love, but if you don't like coffee just double the cream.

Double chocolate brownies
Brownie recipe from epicurious.com

10 T butter
1 1/4 c sugar
3/4 c plus 2 T unsweetened cocoa powder
1/4 t salt
1/2 t vanilla
2 eggs
1/2 c gf flour mix
1/4 t xanthan gum

Preheat oven to 325. Line an 8x8 pan with foil and lightly grease the foil.
Melt the butter in the microwave with the sugar, cocoa and salt. Stir in the vanilla, then the eggs one at a time. Stir in the flour and xanthan gum well, until there are no lumps. Pour into the pan and bake about 30-35 minutes. Let cool.

Chocolate topping
1/3 c cream
1/3 c strong coffee
1 1/4 c chocolate chips

Combine the cream, coffee and chocolate in a bowl, then microwave a few seconds at a time, stirring in between, until chocolate is melted. Stir until smooth, then pour over the brownies, let cool. Cut into squares and serve.

They're really good with ice cream.

  2. I like coffee more than chocolate, and chocolate with coffee so this will be good. I may add instant expresso to the batter to up the ante (but not eat as a evening snack :-)
