Anyway, go make these, they're easy, quick, and delicious.
Adapted from Smitten Kitchen, who adapted them from Mark Bittman
7 T butter, melted
1 c brown sugar (I use dark)
1 egg
1 t vanilla
1/2 c peanut butter
pinch of salt
1 c gf flour mix
1/4 t xanthan gum
3/4 c chocolate chips
Preheat the oven to 350 and butter and 8x8 pan. Mix the butter and sugar, then add in the egg, vanilla, and peanut butter. You might want to heat up the peanut butter in the microwave for a few seconds to soften it so it mixes in better. Stir in salt, flour and xanthan gum, then add chocolate chips. Spread batter into pan, smooth the top, and bake 25-30 minutes. Cool completely before cutting.
Oooo, never tried peanut butter blondies before. These sound very good, and yes, I love undercooked chocolate chip cookie dough :)
ReplyDeleteI'm having such a peanut butter craving these days...and sweets craving. I would make these, but I'm pretty sure I would eat them all in one day, so I'll have to hold off until the cravings go away. :)
ReplyDeleteMy hubby and I love blondies...great job!
ReplyDeleteI've seen so many different renditions of blondies lately and am going to have to try them. Your recipe looks so good - I think I'm going to see how they work with almond butter.
ReplyDeleteCannot wait to try this! I have one celiac child and one gluten intolerant child and they both adore desserts like this! Thanks for the recipe!
ReplyDeleteI made them. They're in the oven now. If the batter is ANY hint to what will be of the finished product, I am a very happy camper. *drooooooooooool*
ReplyDeleteThanks so much for the great recipe!
I've made Smitten's blondies before and they are pretty good.
