Chicken meatballs with blue cheese!

I know this might not be the most flattering picture, but these are delicious. And easy. The tricky part is forming them into little balls with two spoons, but they don't have to be perfect.

Chicken meatballs with blue cheese

1/2 lb ground chicken
1 egg
1/4 c crumbled blue cheese
1/4 c gf bread crumbs
salt and pepper

Mush everything together. Form small balls, about the size of a dime, and drop onto a cookie sheet. Bake at 400 for about 10 minutes, until no longer pink inside. Serve over spaghetti with red sauce!!

    Don't most blue cheeses contain gluten?! I've read that the mold process is generally started using a bread base.

  3. Some blue cheeses may contain gluten, but there are a number of companies whos blue cheese is gluten free, such as Rosenborg.

  4. These were delicious. I used about a pound and a half of ground chicken and the meatballs were rather large but they tasted great! Nom nom nom!
