Shrimp with tomato sauce and feta

This is genius. My mom's been talking about this recipe for a while, which was in the NY Times and now I can't find it, but Elise has a recipe too, here. It's quick too, I threw it together in about a half an hour. It's fantastic!!! Shrimp and feta seem like a weird combo, but really. It's delicious. I served it over quinoa, but it would be equally as good over rice or polenta.

Shrimp with tomao sauce and feta
Adapted from Simply Recipes

1 onion, diced
1 T olive oil
4 cloves garlic, minced
1/2 c white wine
1 t oregano
1 t thyme
salt and pepper
1 can diced tomatoes
1 lb shrimp, cleaned
1/2 c feta, crumbled

Preheat the oven to 400. Saute the onion and garlic in the olive oil until softened, then add the white, oregano, thyme, salt and pepper. Let simmer for five minutes, then add tomatoes. Remove from heat, add shrimp, then crumble feta over the top. Bake for 10-15 minutes until shrimp are cooked, then serve immediately.

  1. Wow, this was really good! It seemed like it needed more veggies so I added some sliced zucchini and diced red pepper. I served it over quinoa and it was delish! Plus, it's easy to make.
