Swedish apple pie
from the Boston MFA cookbook, adapted
1 egg
1/2 t cinnamon
3/4 c brown sugar
1/2 t vanilla
1/2 c rice flour (or flour of your choice)
2 chopped apples
1 t baking powder
1/4 t xanthan gum
1/4 t salt
1/2 t almond extract
Preheat oven to 350. Grease a pie plate, 8" round pan, or cast iron skillet. If using a cast iron pan, put it in the oven after you've greased it. The cake gets a nice crust if you do. Beat the egg til lemon colored, then add the other ingredients. Scrape into prepared pan, and bake for 30 minutes. Cool in pan, serve for breakfast or with ice cream for dessert.
This recipe sounds very easy compared to other pies I have attempted. I will have to bookmark this and bring it to Thanksgiving this year!

HELP Jill Eliiiiiiise,
ReplyDeleteThis looked so easy, I thought I'd attempt it.
A 1/2 four...1 egg...it turns out such a small amount that is rather dry and doughy ...I can't imagine that it fills the pan. I did not mix in the apples yet, as it looks like 1 cup (approx.) of dough. Does that sound right? Even GF bread dough is like batter, but this is really like dough!
Does this sound right? I hope you respond as it is sitting here waiting to go.

OK so I mixed in the apples now, and it resembles Lots of apple smeared with some peanut butter...does that sound right?

ReplyDeleteI haven't made this recipe in a while, but if you don't feel great about it mix in a Tablespoon of milk or some melted butter to get a thinner batter, or some applesauce if you have some on hand. Either way it should be fine!

ReplyDeleteThank you for getting back to me...I already (screwed it up...just kidding...hope not) added a couple of spoonfuls of gf pancake mix that has a heavy vanilla fragrance (and one a scant egg white). It looked really short on the mix and I wasn't sure if it would even rise up around the volume of apple I had. The pics of yours look more like a dense tart (am I right?) which I am sure is how it is supposed to look. But my batter barely smeared the apples. Maybe the apples were too big. I used granny smith...I hope they are not too tart. It is rising up already at 15 minutes. Maybe too much...lol.

ReplyDeleteSO good!!! I cannot believe how fas,t how easy that was to whip up an apple cake in a flash!
I WAS a little puffier than yours or your mom's lpics. Next time I will trust that the brown sugary dough will heat, melt and puff up around the cake. I topped it with a dollop of whipped cream. The whole family went nuts. Only me and the littlest one here are GF, the other 3 are not. Raves from everyone!
