

Mena's meatballs
1/2 lb ground beef
1/2 lb ground pork (you can use one or the other if that's all you have)
3 eggs
4-5 cloves minced garlic
2 T chopped parsley
1/2 c grated parmesan
salt and pepper
1 c mashed potatoes (you can use instant, but use WAY less liquid, or the meatballs won't hold together)
Preheat the oven to 350. Mix together all the ingredients, and form into small balls (about the size of a quarter). Place in rows on a greased cookie sheet, and bake 10 minutes. Turn, and bake another 10-15 until no longer pink in the middle.
I just made meatballs as well, but I cooked them on the stove in a pan. Ill try them in the oven next time. Thanks!
