Bacon Bison Chili

I've been eating a lot of things like this lately. Bison or beef, tomatoes, some spices or vegetables, and voila dinner. This was an especially good one.

Bacony Bison Chili

6 oz pancetta, cubed (or bacon)
2 chilis
1 onion
1 lb bison
2 cloves of garlic
1 can tomatoes
2/3 c stock (or water)
1 T tomato paste
1 T chili powder
1 T ground cumin

Brown the pancetta, then push it to the side of the pan (if it's released a lot of fat, remove it from the pan and drain most of the grease). Add chilis, onion, garlic, and bison. Cook about 10 minutes, until meat is browned. Stir in tomatoes, stock, tomato paste, chili and cumin. Cook about 20 minutes until liquid is almost gone, stirring occasionally. Serve with cheddar cheese.

    Could you make this with ground turkey? It looks delicious, but I wanted to make it for dinner with a friend who doesn't do beef. Thanks for your help!
