Friday, summer.

I had to go cook dinner so I didn't finish that last post. Here are the rest of the recipes.

Scallion Pancakes

1/2 t xantham gum
1 c flour (I use brown rice flour mix)
1 1/4 c water
1/2 t salt
scallions, chopped
2-4 T veg oil

mix the first 4 ingredients together, add scallions, cook as you do regular pancakes in veg oil.

Gnocchi

2 lbs potatoes
1 c rice flour
3/4 c potato starch
1/4 c cornstarch
1 T butter
1 T Parmesan cheese
1 egg, beaten
1/2 t xantham gum

Prick potatoes all over and bake at 400 degrees for 45 mins to 1 hour, turning halfway through.
Peel potatoes and grate them (or mash) into a large bowl. Add eggs, salt, and mix with a wooden spoon.
Add flour a little at a time until dough won't stick to your fingers. When flour has been incorporated, bring dough together with your hands.
Knead on a lightly floured surface.
Form the dough into a ball and then divide into 6 balls. Roll each ball into a rope 3/4" thick, then cut each rope into 1" pieces. Make ridges on each with a fork, drop into boiling water until they float, or freeze on a cookie sheet, transferring to a bag once frozen.
